Growing up at home, I did not eat beef or pork. I only started eating that when I migrated to MN. And yes I came straight from a Caribbean Island to the coldest state I can find! I was darn excited to see snow. After the first cold day, I soon lost the zeal to love snow.
Back to my original story…no pork and beef. We did not eat it for religious reasons or more importantly because my grandparents did not eat it. We just followed the rules and ate what was cooked. Mainly my grandmother had this saying, if you don’t like it, then sleep beside it!
One day my aunt brought home a ham from work, they gave it to everyone at Christmas time in her company. She placed it in the Fridge until she can give it to someone who eats Pork.
Well my Grandmother saw it and guess what…out the back window it went! Yup I am not kidding you. And back thenĀ a Ham was not cheap! It was only eaten at Christmas time. That is how you celebrate Christmas back home to this day! You gotta have Ham on the table.
As soon as I started eating beef and pork, one of my all time favorites was corned beef straight from the can. I do not like the real deal. But I do love canned corn beef with potatoes, onions and peppers, served with fresh tomatoes and toast! That is a fantastic breakfast for me. I know in the restaurants you get corn beef hash, but their is made with the real beef versus the processed stuff.

I agree on the Ham Post, we usually had that Ham at Christmas and Easter I think. I just never knew why exactly, but it was Cloved up and Tasty. I don’t eat the tin Corned Beef as much, I just often forget to buy. But it’s still one of my real comfort foods from home. My Auntie often made it up on the weekends and that Thyme added just gave it some really good flavor. So many these foods bring back life in childhood and a simpler time in life.
