The most creamy, silky, soft and delicious Scrambled Eggs

Today I am going to show you that your breakfast does not have to be the same old boring scrambled eggs.

These are going to be some of the best darn eggs you have ever eaten, I promise you! And no milk is involved.

First off these are some beautiful eggs as you can tell by the bright orange color of the yolks. I only buy organic eggs and they have to be from Pete and Gerry’s brand. Its a brand I find at Whole Foods and some cub foods. Why you ask, well its locally grown chickens, and I love the color of my eggs being rich and I swear it tastes different?


Call me weird but nothing turns me off more than cracking my eggs and its this pale yellow yolk. Think about how beautiful your cake batter will we if you used eggs with bright orange yolks!

Organic eggs or I should say the chickens that lay the eggs do not have any antibiotics, no chemical pesticides, non GMO and they are environmentally sustainable. Those are some really happy chickens!

The Secret Ingredient

You are probably wondering if I made a mistake when I mention corn starch as one of the ingredients to my eggs. Well its no mistake. Add corn starch to you eggs will make it…silky, soft, and holding its body while still being fluffy. I know I threw a lot of words at you there.

Why Corn Starch?

The addition of corn starch keeps the eggs from becoming dry and rubbery. I know you may not have noticed it before, but once you have eaten your eggs with the addition of the corn starch then you will see the difference I speak of. The corn starch holds the protein together so you get this soft fully cooked scrambled eggs.

There was this seafood restaurant here in Minnesota that had these beautiful scrambled eggs with buttered toast as an appetizer. Which at first did confuse me…who serves eggs at a high end restaurant as an appetizer? These were not ordinary eggs…these eggs was just out of this state delicious.

One day I built up the nerve to ask the chef what was the secret…his response was oh just a good old corn starch slurry! You bet I went home and started experimenting…and this was the result.

To take your eggs to a whole complete level if deliciousness..add a tablespoon or two of cottage cheese. OMG the cheese slowly melts while cooking creating just these tine bites of creamy goodness.

Sprinkle on some finely minced chives and a buttered crusty bread and you will have the best darn breakfast or appetizer ever. Just don’t try taking pictures of it after…or like me you will end up with cold eggs 😂.
