Where I live, we do not get fresh salted pig tails…or salted beef. I recently went to our local Guyanese Grocery and guess what? They had a brand new shipment of salted pig tails and salted beef! My eyes literally lit up! I was so excited. I did not care how much it cost. Getting salted pig tails is a rare commodity for us!
I know most people will cringe at the thought of eating pig tails. But if you really think about it, its not that bad. Unless of course you really don’t like meat with bones, then okay, sure I will let it slide this time! Salted meat will take your dishes to a whole other level of yumminess.
It regular tails soaked in a salted water brine. When you bring it home from the butcher, you will have to cook out most of the salt, before actually using it in meals. I love bone in my meat so you know I am all about the Tails!
I have been seeing and drooling over pigtail soup forever. Not being able to eat or make it was killing me! So that is exactly what I made the very first day I bring my tails home!
I love, love a Caribbean soup, it is starchy and very filling. This is a soup that you eat as a meal. It has lots of root vegetables, dumplings, noodles and fresh seasoning. This Pigtail Soup will cure any cold or flu like symptoms you have! In the Caribbean there is a saying that soup and ginger tea will cure anything! From the very first sneeze or sniffle…a pot of soup will be brewing on the stove!
