Happy Independence Day America!

I have been in America exactly 15 years and not once have I regretted my decision to move. I have been truly blessed to have had that once in a lifetime chance to make my Dream come through.

People like to say you are living the American dream, I don’t…its actually my dream being lived out in America.

Even though I love this life of mine, I do miss my home and my mothers cooking and Doubles and KFC! Yes KFC in Trinidad is completely different than here in MN.


Growing up in Trinidad Roti and vegetables was a weekly staple in our diet. We only ate meat on a Sunday. Sometimes during the week we would eat seafood. But mainly it was roti in the morning and at night with some vegetable fried or curried.

One of my favorites was Fried Plantains, we always had Plantains growing In our yard. Never were we out of that. We also lived on Root vegetables, one of which was Eddoes or Taro Root. We ate this more than potatoes as we also grew this. My Grandparents were serious planters! We did not sell vegetables but they made sure we had every mango tree, orange, plum, grapefruit, bananas available.

So this week I made Sada Roti, Fried Plantains and Eddoes for dinner. Good home cooked comfort food.
