This week I am bringing you another great one pot meal! I love developing one pot dishes.
No one likes doing dishes after dinner. Notice how everyone scatters right after they have eaten? They suddenly have emails to respond to, homework to be done…and here you are stuck with 10 pans to clean after making a 5 course meal!
Well no more! Enough is enough. We are going to make this meal in 1 skillet. Everything goes in and cooks in 30 minutes. Yes there is some prep work to be done. But easily solved.
I used mushrooms and kale in my dish because it is what I had in my fridge. You can use any vegetable you like. In fact you do not even need to use any in this dish. We do eat with our eyes first, so the mushrooms and kale made this dish look more appealing.
If you are going the route of the mushrooms and kale, these can all be bought pre-chopped. The chicken thighs will need some love as they have to marinate for 30 minutes at least in that yogurt.
How Greek Yogurt Works with Meat.
Greek yogurt tenderizes meat much more gently and effectively than regular marinades. Yogurt has two important qualities when it comes to meat, calcium and lactic acid. These two together work to break down the protein in meats, leaving it tender and moist. Yogurt slowly tenderizes meat much more gently than regular marinades.
Tumeric
Tumeric is NOT the same as saffron. Would you believe growing up my grandmother would plant a lot of turmeric and we used it often in cooking and for weddings (a story for another day). Here is the thing, we used to refer to it as saffron and not turmeric. It is only as I got older, that I was able to differentiate between turmeric and the very expensive saffron flower. Definitely not the same.
There are many health benefits floating around out there that you can use turmeric for. but for our purpose in this dish, it is used to add a deep golden hue to our rice dish. Turmeric in cooking brings warm flavors to any curry or stew. When you sauté the vegetables in oil, add in 1 teaspoon of ground turmeric. Use it sparingly as it will turn your food bright yellow if too much is used.
Star Anise
I decide to add star anise to this dish as it actually pairs well with peppercorns and turmeric. It has a licorice aroma. Do not bite into it. You will be tasting it for days to come.
You can use any chicken parts you desire. I just prefer dark meat. Or leave out the meat altogether if you want to make this vegetarian and use vegetable broth.
