I have been studiously avoiding anything that relates to food all week. I know what you are thinking, how could a food blogger of all people avoid food? Well to explain, I jumped on the band wagon for juicing…yes I know I said I do not diet or will not starve myself because I exercise.
Hold you horses let me explain…its the last week of my 12 week boot camp challenge. In order to maximize on my last weight in on Saturday it was suggested that I juice and detox. Which is how I ended up in this juicing business. It is HARD!!!! Especially for someone like myself who thinks about food at least 14 hours a day!
I started on Monday, with smoothies, very green smoothies…I gagged my way through the first breakfast smoothie of the day, then for lunch was the juicing and for dinner salads. Everything was green and leafy. My tummy was saying why are you doing this to me? In my juicing I used beets, which was delicious or maybe I was just that hungry. By day three…I was losing energy. And I was told that my energy level would be low on day three. But day 4 is here and I think I have regained some of my energy. Its not as high as I usually am but it definitely is not as low as the third day.
This is where this Cheesy Frittata comes in. I just could not stomach another green leafy vegetable. Instead I made this Frittata, and added all those same vegetables to it and OMG…was this the best meal ever! I don’t even like my eggs like that but these were so good with the cheese and the sour cream.
Pair it with a salad and you have a great dinner! I had mine for Dinner. It was so good!
