I have never eaten Oxtails, not that I can recall it. Growing up in Trinidad, my family did not eat Pork or Beef. And we only ate goat around Christmas time. I only started to eat Pork when I came to MN. I would like to say its the cold, winter weather that converted me, but sadly it is not.
I love a good steak! And I love, ribs, Ham on Christmas morning, pig tails in my cook up rice, souse! How could I stay a strictly seafood and chicken kind of girl? It was just not meant to be.
I am excited by anything exotic! Yes Oxtails are exotic, whey else would they cost an arm and a leg to purchase? It is simply something we only cook on special occasions.
Usually you would put spinners in this dish, spinners is simply a different way of rolling the dumplings. In Trinidad our dumplings are traditionally flat, unless we are making soup. Then its spinners. The truth is I was not going to stand all they rolling these dumplings into little spinners, so I took a short cut and made them flat!
I made this Oxtail and Dumplings dish along with my Cheese Board for my girls night in. What better time to test out recipes and eat what you don’t normally eat during the week!
If you do make this dish, make sure to let your meat marinate over nighty for full flavor. And the Green Seasoning Paste take this dish to a whole different level.
Go ahead and suck on those bones, it is full of flavor!
