I bet you did not know that Goat is the most eaten meat in the world! It sure is though!
Growing up at home Goat was a luxury. We only ate it on special occasions! My Grandparents usually bought a small goat at the beginning of the year and we would have to take him out to graze and give him water every day! Trust me at 12 or 13 years old that goat was the last thing on our minds!
Every morning I clearly recall my Grandmother calling and asking if we took to the goat out…at night the goat stayed in the pen. One of our goats we named Freddy! Well guess what…little did Freddy know we were plumping him up for Christmas! Yes sadly…that is how it was. Freddy was humanly butchered at Christmas time and shared. Every part of the goat was eaten…including the blood! Yup…I will not say anymore about that.
I actually do not eat it as often over here, give me a good steak 5 days a week and I am happy…goat has to be properly prepared so you do not taste that gaminess.
Part of the preparation is making sure you trim most of the fat off. That fat when left on will render oil while cooking and taste gamey. Then you have to wash it with lime juice a few times.
Season it really good with lots of garlic, ginger, cilantro and peppers. Allow it to marinate over night. I have only curried my goat in the past. I have tried BBQ goat…which I will never do again. I am going to stick to Curry Goat! I love Curry Goat with roti or rice! Of course if you eat too much curry then guess what…it smells for weeks!

I had a bunch of goats and sheeps I had to take care of growing up all the way till I finished High School in the islands. Take them out to the pasture a bit lose to our house before going to school everyday and weekends. Bring them back in at evening after school and at sundown everyday. About once a month we klled and butchered one of them. I always appreciated just where my food came from as we also had a vegetable farm in out few acres yard.
Kids these days, just have it too easy I say and can’t appreciate where their food come from. But like you as well I’ve only had Goat Curried of Stewed. I got 5 lbs of goat meat in my freezer. So I’ll put this one on my menu in two weeks when I get back off my Vege Juicing binge.
