Bison & Beef Meatballs with Meat Sauce.

Have you ever had a Bison Burger?

Simply delicious. Bison meat is one of the healthiest meat there is as it is lean and has no fat. There is this Italian restaurant in the skyway at work that makes authentic Italian food. Very authentic, as they are from Italy, they speak Italian, they play Italian music and the food is absolutely amazing.

There is an option on their Low Carb menu in which you get 3 huge meatballs with meat sauce and a side salad. I love it. That meatball is so tender and full of flavor.


So knowing me…of course I had to try to re-create their recipe. My take on it however I used half bison and half 80/20 beef. We can’t all be healthy after all.

Instead of the usual breadcrumbs though, I used good old sliced bread soaked in milk. This is what gives it a moist and soft texture. I reserved some of the meat from the uncooked meatballs and used that as my base for making my sauce.

I gotta tell yah…it was pretty close in taste to the real deal! Although one of my guinea pigs have not said if they liked it or not.

Try making your meatballs with the soaked bread and look at the difference it makes.
