Beef Short Rib Tacos

This old gal actually made it out 3 times this week! Oh yeah! Dinner one night with my friend, out for restaurant week with the family and hit the club and rolled home at 4 am in the morning! Party animal I am!

Update on the finished project of Tuck’s Everlasting house. I think I spent more on buying the pieces to assemble the house than the house is worth itself! She did an awesome job though. She did not want any help! And I wanted to get in there and give directions. But she did it all by herself.

Now onto this in depth, delicious Beef Short Rib Taco recipe.

One of the best taco recipes I have had. It does take a bit of prep work, but most of it is make ahead. I marinated my beef, made the Chimichurri sauce and my siracha sour cream the day before. So when I got home from wok I had only the slaw to put together and grill my beef.

The guys will go wild over this one for sure!

Here is a story for you though…I usually work from home on a Friday. And where I work its get a bit chilly sometimes. So I usually leave a light jacket at my desk.

Well I came into work on Monday and my little blue Twins jacket is gone! It has been hanging in my cube for 2 years. I take it home wash it bring it back.

So I sent an email off to the head of security letting them know what happened.  His response was that I should lock up my items prior to leaving work each day.

I can do that yes, however there has to be a decorum of security knowing our things are safe. Whatever happened to feeling secure and safe at your work place? It makes me a little bit ticked and creepy knowing someone else is walking around wearing my clothes!
