Okay I am officially tired of winter! Last week the temps actually got to 70 degrees, would you believe it snowed today! Almost 6 inches of wet, heavy snow! So unfair!
I washed my truck, I cleaned out the dirty snow mats thinking winter is over, and no surprise we get snow. Do you know how long it takes to get through the car wash in Spring? You have to take snacks, water and a good book because the line is very long! Everyone is washing there cars. Even the cars that don’t need washing is in the line!
Now I have to do it all over again. Its like Summer is just teasing us. Giving us a little and then taking it back. Its like a guy who pays you a little bit of interest and then he ignores you for 2 weeks! LOL
Okay so because I thought I was well on my way to warmer, greener pastures, I broke out my grill yesterday. I saw this smoked chicken from Barrel and Ashes restaurant and I just could not get it out of my head. And since I do not live anywhere near the restaurant, I have to recreate it myself.
Of course they don’t publish their recipe so I had to wing it! This is my take on a Smoked Beer Can Chicken. I brined it ahead of time. I was patient while it smoked low and slow. It was well worth the wait. Smokey, juicy, salty goodness.
Shake off those winter blues and pull the BBQ out!
