A late Merry Christmas, Happy Holidays and a Happy New Year to all.
I hope you had a wonderful Christmas and got to spend time with family and loved ones.
I certainly did and I ate even more than I should, I am trying to fit into a bathing suit in 3 weeks time after all!
In three weeks I will be off to my Caribbean Vacation that I have been patiently waiting for.
But before that, while on Christmas vacation, I made a Butter Chicken recipe inspired by my darling friend from Toronto who practically lives on this!
I decided to finally give it a try and see what all the fuss is about. I was not disappointed. Of course like any chef or cook, I made it my way…with a little more spiciness, I added a little of my green seasoning, that you will find in most of my dishes.
To go with this spicy dish I also prepared a refreshing Honey Crisp and Manchego Salad that went perfectly with this to cool it down a little. Do give it a try and put your own little twist on it!

This Butter Chicken looks very interesting and i can’t recall ever having heard of it. But the ingredients and prep looks interesting and fairly easy. I think i’ll use Chicken Thighs as i have plenty of it in my Freezer.
