Ahhh it feels wonderful to actually say Spring! Just saying it makes me feel like planting, sunshine and rain! I actually love the rain especially in the night time to sleep. Growing up in Trinidad the roof of our home was metal with no ceiling so you heard every rain drop loud and clear. Wonderful feeling to fall asleep to. However not good when you had to walk a mile or two to get a taxi to go to school. And most times let me tell you, that rain would only start falling at 7 am. Just in time for my long walk to school. Which meant I was drenched and soaking wet by the time I got there. And no I did not have an umbrella, that was a luxury back in those days. When I go home now, I am always amazed that everyone, everyone has a cell phone.
Times have certainly changed. I do have a trip coming up in a month that I am looking forward too. Eating healthy, trying to stay away from the bad carbs…nothing white to eat. When my monster gets her BK after school on Fridays, I just in hale…and dream of biting into that spicy chicken sandwich all for the love of flat tummy and no Jiggle. LMBO.
At the request of a fantabulous coworker at work, I made this Greek Salad and Dressing. Her son is an up and coming little chef, who I am sure will make one gal happy one day that he took the time to learn to cook while he was young. Such an important quality in a man!
