Happy Belated Easter!
I know I am always late on the ball game for posting recipes related to that holiday! But the good news is…I have a great Spinach and Artichoke Bread Pudding side dish for you today.
I know you are like bread pudding as a side dish? Isn’t that a sweet dish? Are we serving dessert as side dishes now?
Like I tell my 13 month old who has just discovered her favorite word “this” while pointing at EVERYTHING…all very good questions. This particular bread pudding is not sweet but rather savory! Its like a creamy, gooey, dreamy Spinach and Artichoke dip…but with bread! Yum
Aren’t you tired of the same old boring cornbread stuff for thanksgiving and easter? Every year we serve the same thing over and over again. Well not this year! I said no more. This year we indulged in this savory, crusty on top with melty cheese and sweet brie Spinach and Artichoke Bread Pudding!
This dish literally comes together in under 30 minutes! And you know what I did not add any meat to this dish, not that it needed it, but after the fact I thought a few pieces of smoked turkey or chunks of salted pork would just put this over the top!
I used a day old French baguette. Really any dry crusty bread would do. I chopped it into 2 inch pieces. The smaller the pieces the more soft the bread would be. I wanted mine to have a little bite to it.
I also used frozen spinach to save on time, but you can also buy fresh spinach, and flash fry it until it is just wilted. then roughly chop it. And I used canned artichoke hearts, because it is next to impossible to find soft, fresh artichokes here. And I did not want to be standing in the kitchen cleaning artichokes. The canned ones worked just as well if not better.
To say that this dish was delicious was an understatement. I served it alongside deep fried turkey, and mashed potatoes with gravy.
Because this dish was so quick and easy, I even got to enjoy Easter with the family and I was not stuck in the kitchen while everyone got to enjoy themselves.
