With Summer slowly meandering into MN at its own pace, folks are breaking out their BBQ grills and throwing meats, vegetables and more importantly CORN on their grill!
Everyone loves corn, whether it is roasted, boiled, baked in coconut milk, in a casserole or straight from a can! My family has to have roast corn at every event we have. Traditionally in Trinidad, my grandmother used to just throw it in the fireside. A fireside is just an outside cooking stove made with cows manure and dirt. Yes I said Cow’s Manure. The Manure was just to help firm up the dirt and helps to keep the fireside longer.
Actually I have been to a house where the entire thing was dirt and manure. It does not smell like you would think. Okay I am drifting…
We liked our corn charred! And you could not eat that by biting into it like you would normally, you had to shell it one kernel at a time or you risk breaking a tooth! LOL
Our favorite way however was to boil it on the stove, and season the water it was boiling in which would add flavor to the corn so you can suck on the husk!
I had some left over corn from the weekend, I took the kernels off and added it to my pasta salad, it was divine! I loved the texture it gave the salad and it gave it a natural sweetness!

I’ve been gone a while to Alaska on work project, but i’m back. Looks like your energy level been at an all time high around here cooking up loots of tasty goodness. Haven’t had time to read everything but i’ve eyed all the pics at least to drool.
You forgot to post the recipe for this dish, I’ve looked and couldn’t find it. Also whats the recipe for the Kidney Beans dish in the background? Inquiring mind wants to know.
