Clearly I am dreaming of warm, sunny days ahead, already planning my menu for my Summer BBQ. It is only about 7 months away! You can never plan too soon. This is the perfect BBQ side dish for your next event. Potato Salad like we make it in Trinidad!
I hate winter…I truly do. I can recall some many years ago when I first landed on American soil, with the American dream, one of the most exciting things for me to experience was snow…I remember the first night it fell, I was at work as I worked nights then. At that time I took the bus and had to walk about 4-5 blocks at 6am in the morning after my shift ended.
My manager came into work that night and told me that the snow was falling…I excitedly ran up the stairs and outside to see what this most amazing thing was that I had only seen on TV. Twelve hours later…it was still falling rapidly! I had to walk my twelve blocks to the bus stop, slipping and sliding, stomping my way through all that slush!
I can surely say, that snow got old real fast! I will say if I am at home, in my comfy house with no reason to be out and driving around then yes I do love the feel of snow falling outside.
While taking my monster home, she asked me how come we have not built a snowman yet? I said, it is too cold, we have to wait until it is warmer out. Her response was “nini we cannot build a snowman in the Summer”, I was like sure we can, look at OLAF from Frozen! He lived in the Summer! My monster do love the cold though. She has a hard time with the heat whenever we visit Trinidad.
Thanksgiving was a blast! My turkey was a big hit I must say. This is the very first time I have baked a Turkey! We usually Fry our turkey. It came out perfect!
I melted butter with a cup of beer and added some dry spices to it. Then I injected it into my bird. The butter solidified under the skin and melted slowly as it was baking. Juicy! I also brined my bird for 24 hours and had a dry rub over it. I started it in the oven at 500 degrees for 30 minutes, then dropped the heat to 350 until my thermometer beeped that the breast part was 160 degrees. I did not open my oven at all! Not until the thermometer beeped. No basting.
I posted some pictures below that I took with my phone.
