It has been raining since Saturday! I am not complaining. I love it. I love to fall asleep to the sound of the rain falling on the roof top.
In honor of fathers day I made a Porchetta. Now it is very hard to find fresh pork belly with the skin on. I had to make the trek out to another part of town to find one. When I got home and got my belly thawed out, I found out that there was no skin on it! OYE
So I had to start my search all over again. I finally found one very close to my home at a restaurant depot. It was the last one on the shelf. Talk about being lucky.
So what were your plans for Fathers day? We spent it at my sister’s home. I made a roast duck, with the Porchetta and a refreshing salad!

I spent it driving up to NJ from NC the day before. And then up to NY to visit my Dad, from Atlantic City visiting my Sister. Then spent the entire day hopping all over Brooklyn to friends, relatives Food Get together. I met Family of my Dad i never new that were from St.Vincent. I had a great day in Brooklyn and reminded me how fun and tasty of food it can be to live close to or around Caribbean people with the smell of BBQ in the air. Nothing smells like Caribbean BBQ and when I smelled it in the air the first time I knew It really was Caribbean BBQ in Brooklyn like i remembered back home.
Can you post the recipe for that nice light refreshing Salad above. Thanks.
