I am sure everyone’s garden has an overflowing abundance of tomatoes right about now. Are you trying to figure out how you can add tomatoes to every meal?
I sure am! I planted 14 different types of heirloom tomatoes in my garden this year…What the heck was I thinking? I knew I should have started my garden shopping in a different section first! UGH
So yes I am harvesting tomatoes like crazy. I have already roasted a lot of them and freezed it. I also chopped up a few fresh ones and froze those as well. They will go into my stews and soups in the winter time. Next I am going to try my hand at tomatoes sauce. Wish me luck!
In the meantime, you can use some of your cherry tomatoes in this amazing pappardelle dish. This dish is by no means Italian or Thai. Its rather a combination of both. The roasted tomatoes just took this dish to a whole other level. It gave it a sweet burst of flavor.
I added a 1/2 cup of water to my beef while it was browning because I wanted the beef to be softer and a little creamy. Not fried with a dark crust.
