Happy Easter!

What type of Easter holiday person are you? Are you the Easter Bunny type, with the egg hunts and egg paintings. Or are you the Church going, big meal, no meat, eat only fish type?

No matter what type you are in some parts of the world you get a holiday for Good Friday and Easter Monday. Not here in good old America…Nope we gotta work. Now in Trini, shoot…they got Friday and Monday!!! Oh how I miss those days.

While I am not catholic, we have always respected Easter Holiday. We did not go to church, but we ate fish on Good Friday, no rice, not sure why? But tradition was Provisions and Fish or any seafood on Good Friday. Easter Sunday, of course it was a huge meal. It was the equivalent of Christmas dinner.


Now that I have three little monsters around me, I am the official Easter Bunny for them. I have hidden 192 eggs filled with candy, and yes I ate half the candy while I was filling them. But they won’t even know. Sunday we will have our huge Sunday lunch. One of the Appetizer’s I am serving will be this Bacon Wrapped Crab Stuffed Shrimp! Yes it is quite a mouthful…but Oh my what a delicious mouthful!

I mean who can resist, bacon, a crab cake and shrimp all in one bite! Give this appetizer a try for your next gathering!
