Halibut with a Thai Red Sauce

It is next to impossible to find fresh fish In MN. Coming from an island, where the fishermen came around selling fresh fish or seafood each day was a luxury! Of course back then I did not appreciate it. Now I long for those days where I can hear the honk, honk of the fisherman coming around.

Fresh fish does not need any dressing up. I love, love Halibut. But it is super expensive. The monster is a Salmon girl. She can eat Salmon 7 days a week with just plain white rice.

I don’t like Salmon. But I love the flaky white tender flesh of Halibut or Cod or even Snapper. I was able to get to Coastal Seafood this past weekend which is the only place you can really get fish that is as fresh as you can in MN. However…it is mad expensive. My Halibut was $24.99 per pound on sale! So when you cook this fish you know there are no room for errors or mistakes!


I wanted my fish to shine, but I also knew I wanted a sauce to go with my fish. I seasoned my fish salt, black pepper and a sprinkle of paprika. Then I seared it for a nice brown, crispy top.

For the sauce I used a red, Thai curry paste., but used it mildly and added coconut milk. The Halibut with a Thai Red Sauce was a hit!

This is served with this beautiful Cast Iron Roasted Potatoes. It was delicious.
