Cook-up Rice with Salted Pigtails

Pigtail? Really…ewww…I bet that is what you are all saying! My little monster said, I am never eating that! I bet if I curry it and tell her its chicken she would eat it though. LMBO

Okay I will not do that to her…as yet. I will wait for a weekend when she has math homework and she goes into one of her tantrums. I am evil like that! Ok, ok, I am kidding…I am not evil…most of the time.

I have been on call for work since last Wednesday, I am done tomorrow morning at 8 am. I am counting down the minutes! It has been rough. I need sleep. Getting page at 2 am and trying to fall back to sleep only to get paged again is rough on these old bones.


Back to my one pot rice dish, you cannot go wrong with it. It is quick, easy, and very simple ingredients. When you talk about Carnival or a beach lime in Trinidad, this is what you think of in terms of food. If you can get past the idea of pigtails, you will love it. In fact on my last visit to Barbados, I quite enjoyed BBQ Pigtails! My white boy did not however and he refuses to eat it. More for me I say.

I don’t think I’ve ever had pig tails before or ever seen a recipe mention it – I am so intrigued- what do they taste like?
I am always trying to trick my daughter into eating stuff – usually its disguised veggies.

It actually does not taste the way most folks think of it. It’s got a lot of cartilage (soft chewy bone) and lots of bone! Very little meat. But if you like meat with bone then it’s great! Once you get past the fact that it is pig tail you will be ok. This is salted pig tails so it’s very very salty.
