Coconut Bakes

This had to have been the first time in at least 16 years that Halloween night was bearable weather wise here in MN. It was a wee bit misty, but heck it was warm enough for the kids to walk around outside. In fact forget the kids, it was warm enough for me to take the kids out without freezing my butt off!

In keeping with my coconut recipes, this Coconut Bake is a family favorite. It is actually a Caribbean favorite. I think every island in the Caribbean makes some version of bakes. There is fried bakes, there is pot bakes, and there are Coconut Bakes. I have made the fried bakes before to be eaten with my Bake and Shark.

Today I made Coconut bakes, which is a heavy, bake that does not require a lot of time to rise. It is a comfort meal that is served hot and eaten with salted cod and tomatoes or butter and cheese.


If you are stressed out at work or in your personal life, try this recipe, it makes everything better! Just like Chicken soup and ginger tea heals everything! Remember to breathe and walk often.  I love eating my bakes with butter, cheese and jelly! Hmmmm Dah-licious!
