I do believe it has been a full month since my last post! Its been busy with work and personal travel the past month. When I was finally ready to post however yahoo had a bug in their code and I was unable to log into my site to make any updates. That’s my story and I am sticking to it.
Since I last posted I have been back to Toronto, then zipped down to NC and then I was off to Trinidad and its beautiful 80 degree weather and of course yummy food!
It is always nice to catch up with old friends and meet new ones when I go home. I used to think to myself, they changed, but really…its me that changed. We get older, we think to our self, what was I thinking! LOL I know you know what I mean!
As soon as I got back, the monster of course demanded I allow her to have a sleepover with a few of her friends. I gave in…I usually do when its comes to her. As long as the sleepover is at my home then all is good. I feel safer. She likes to tell me that I am overprotective. I tell her I watch SVU and Criminal Minds! LOL
It was not too bad I must say. Lots of giggling, and squeals of laughter and they ate all the time!
This week I made Chicken Drumsticks with yams, mushrooms and spinach. I wanted something simple and easy. And this was it! The hardest part of this meal was waiting for it to finish so I can dive in!
I did try this with pork chops and kale, I did not like it as much as I liked the spinach and chicken. My pork dried out :(, I added mushrooms this time because I wanted a little Oomph!
It was delicious, I actually patted my back!

Yeah I was wondered where you went as it’s been a month. That’s a bit of traveling around there too.
This looks really great! Read the recipe and looked over the pics (always helpful) looks interesting and easy enough. I think I got most the ingredients for the dish already too. Just need some White Wine mostly. Don’t have any real Yarm’s but i’ll use Sweet Potatoes. Maybe get a better oven proof skilled (Cast Iron) once and for all. Think i’ll be able to make this Friday Night, will let you know how it goes, should be fun.
Henry! Great to hear from you! I actually used sweet potatoes. But here they call it yams! It’s not our yams from back home.

Well… i didn’t get to make it Friday night, but i made sure it was made before the weekend was out, so made it tonight. I followed the recipe mostly but not exact on ingredients, as i winged it using more chicken and sweet potatoes. I think i overcrowded the pan. But oh well cooking is a bit experimentation. Just used Chicken stock and seasoned by chicken with my own green seasoning i had on hand.
Anyway… the dish tasted AWESOME! The Bacon sure added some good flavor to the dish i must say. It didn’t come out looking quite like yours, but it sure tasted good. I’m sure to make this again and use less Chicken and Potatoes to not crowd the pan. I really enjoyed this one.
