Where has the time gone! I remember my little monster being a tiny, cute baby just yesterday. Now she is all arms, and legs, taller than I am, with bigger feet. Trying to squeeze her big feet into my size 5 heels and walking around the house asking if she can use my shoes!
She has started to let me know she is no longer a child but a TWEEN! She wants me to remove the password that I have set on her IPOD and IPAD, which would allow her to download whatever she wants! I was like not in my house!
Another one she has been asking about is if she can go walk around the mall with her friends while I am at the mall, but just not with her. I was like I watch enough SVU and Criminal Minds to not let you out of my sight. Not until she is like 18! LOL
Okay onto the recipe for this week. Yesterday I made a Halibut with a Thai sauce (coming soon) and served this Cast Iron Roasted Potato dish along side it. Very easy, and straight forward to make. Yummy with a crispy outside and creamy inside.
The only tedious part of this dish is slicing those potatoes. However if you have a handy mandolin, or a willing Sou chef then you are set! Just be sure you slice them as evenly as possible to allow the same cooking time.
