This Blueberry Lemon Icebox Cake is certainly the star of this weeks feature! First off it has cake, which is my absolute favorite dessert, is has homemade Lemon Curd, which I can eat with a spoon all by itself and it has whipped cream with fresh Blueberries, what’s not to like about this?
If you and your Sweetie are planning on staying in and having a romantic dinner at home for Valentines day, this is the dessert to make! You can even make this easier and skip the whip cream and use store both ice cream instead. But it is so worth it to have that Lemon cream.
My monster is that age where her taste buds are changing, well in reality I think her taste buds change weekly if you ask me. She goes through these stages where she loves beef patties and will eat it 3 times a day for weeks and suddenly she will just stop eating it and find something else to eat for 3 weeks.
Well now she is focused on the Blueberry Lemon Icebox Cake. She half the darn thing herself. Which is a good thing for me I guess, she is helping me clear out any sweets in the house.
For this cake I could not find store bough Lemon Curd, even though the Monster and I drove around to different groceries looking for it. So I ended up making my own and it was so worth it. Lemon Curd is the easiest thing to make do not let the name of it put you off. It is so good on plain old pound cake…I know because I ate a lot of it when I was making this cake.
