Empanadas

Happy New Year!

I hope you all had an amazing Holiday and an even better New Year planned.

Before we all go onto these crazy diets and new year resolutions, I am sharing with you an amazing recipe I did for @196flavors over the Christmas break.

There are literally hundreds of different recipes, with slight variations making each one unique to its own country. I made these empanadas to take to the Kubes’s Christmas gathering and I was amazed at how many people did not know what an Empanada actually is.

An empanada is a type of pastry baked or fried in Hispanic cultures. The name comes from the Spanish verb empanar, and literally translates as “enbreaded”, that is, wrapped or coated in bread.

Empanadas are made by folding dough over a stuffing, which may consist of meat, cheese, corn, or other ingredients.

Empanadas trace back their origins to the northwest region of Spain, Galicia. A cookbook published in Catalan in 1520, Libre del Coch by Robert de Nola, mentions empanadas filled with seafood in the recipes for Catalan, Italian, French, and Arabian food.

Its like a meat pie with a baked or fried dough that is filled with meat! That’s it, really flaky and delicious.

For more detailed info on empanadas or this particular empanada that is from Bolivia and is locally called Saltenas head on over to 196 Flavors. So before you head off on your non carb diet and healthy eating be sure to give this a try.

Wanted to add that a very good Cookbook I picked up last year: Gran Cocina Latina by Maricel Presilla is an awesome cookbook and somewhat encyclopedic for history of food of the Latin americas, their origins and awesome recipes of the culture with their local variations. Since your ocassionally doing these global foods it could be a book of the americas that you may find interesting to check out or have. It’s certainly an interesting one to me.

Happy New Year on the blog!

Felt like haven’t warmed my corner chair around here for a while. I surely do know what these are via food knowledge and growing up close to Puerto Rico Island wise and it’s food influences. Plus my stepmom traveled back and forth to there a lot buying stuff for shop store and she would also bring back interesting stuff to cook that was Puerto Rican. Still, I remember growing up and eating Saltfish cookup stuffed inside something very similar to an empanadas or could of been. You don’t ask, you just eat as it smelled tasty. Even remembered in school going to the shops close by and having CornBeef stuffed in these pastry like empanadas. Historically I don’t know where the ideas originally came from back then on the island or influence. To me at the time, it seemed like something that was local, but no idea what the original influence was.

I’ve never personally ever made them or much pastry ever. But do seem like something interesting to try out for adventures in da kitchen.
