Happy Easter!
How do you celebrate your Easter? I know it is a Christian Holiday or Celebration of life. Most folks go to church, but there are also a lot of them do enjoy a good Easter Egg Hunt!
Growing up we used to make a huge meal for Easter Sunday. We would get up early and start cooking in order to finish by lunch time. All so that we can watch all the Biblical shows that was showing on TV because of the Easter holiday.
In Trinidad we got Good Friday and the Monday as holidays. That I know no other country can beat us at! We have the most holidays. We get a holiday for anything and everything! You have to love it.
Good Friday we always cooked Fish or seafood with provision. So for my Good Friday I made this fresh yummy Scallops with Bacon and Asparagus.
Nothing goes better with Scallops than crispy bacon bits! The asparagus is to keep it fresh. If you are able to get Fresh jumbo scallops, what a difference it makes compared to scallops that has been frozen in the grocery for months!
