Paratha Roti

Hi there!

Its been a while since I have posted anything. A whole year in fact. Life got busy, especially with a toddler. I was not motivated the blog or make content anymore. But I am slowly trying to get back in the swing of things.

This year has gone by in the wink of an eye. So many new things going on now. My daughter is almost three now, it felt like I had her yesterday. Thank god she still does nap times. I am dreading the day she says she does not want to nap anymore.


Took a few trips since I have last been on here. The most recent was to Cancun, Mexico. We stayed at a resort but we did venture out 1 day for a day trip to the Ruins. And just outside of the ruins there was a street vendor selling Tacos. BEST DARN TACOS ever! If you ever take a trip anywhere, I urge you to go out and try the local food.

The food at the resort is completely different than the local food. Speaking of local food, this Paratha Roti recipe is NOT the same Trinidad roti, just to be clear. This version is more adaptive to India. I did not use any rising agents in this recipe. Whereas in the Trinidad paratha roti we do use baking powder. I did the log roll method to save on time.

These days I am all about saving on time. I usually just have a small window to prepare dinner after all the kids activites. The last thing I want to do is spend a lot of time in the kitchen.

I am sorry about the quality of the video as well. I did this using my iPhone instead of my canon.
