I hate eating clean…I really do. No one hates eating vegetables more than I do, even though I am a work out freak. Well I work out so I don’t have to eat clean. I guess every now and again it is okay to eat a wee bit of vegetables, you know for digestion and all that good stuff.
Then why the heck do I have this healthy as can be Shrimp Stir Fry today? Well after eating everything in sight for the Super Bowl…and The Monster is on this new kick where she loves Teriyaki Stir Fry with mushrooms and broccoli served with rice. So of course I feel guilty for craving bread and popeyes while she is eating healthy.
On top of all that one of this weeks challenges at Boot Camp is to come up with a recipe, cook it and post a picture of it. And this was mine. I figure I can try to be healthy for 1 week and see how it goes. You guys are going to love my next recipe tomorrow though…check back for that.
In the meanwhile enjoy this healthy take on Shrimp Stir Fry.

Made a knock off version of this using Frozen Stir Fry Vegetables i had. I used a bit too much ginger but I’m used to ginger. It came out good still winging it. Didn’t make any rice. So the shrimp and vegetables was great.
The first paragraph pretty much says it all. Though I don’t work out as much I moderately just try to exercise and every now on then go on a juicing binge. I love to eat, but overall I try to eat healthy unless meeting my occasional food Kryptonite (Cheesecake). I made a big pot of Chicken Provision Soup for the Super Bowl, quite different that is. I just had to use up that whole chicken before it spoiled. Enough soup for days.
Love the Recipe. Got some Shrimp in freezer to finish up, so maybe by end of week I’ll make this.
I’m still waiting for that awesome Rabbit recipe….
Henry, I know you and this pesky rabbit! LOL
Truth is I di dtry a rabbit recipe this summer…it did not come out very good at all…it was supposed to be in a stew form…but it was so rich that it just di dnot taset good.
I will have another go at it soon…more than likely I will stick to the traditional Trini way and curry it! If it walks, it can be curried! LOL
