I am giving you guys a break from all the bread I have been making. I know most people have that sweet tooth. You guys are going to think I am crazy when I say this but I am not an ice cream person. Nope I can go months maybe even years without even eating ice cream. Now cake on the other hand, that I have a serious weakness for.
This Blueberry and Cream Cheese Muffin recipe is so freaking out of this world delicious! I cannot tell you how many times I have made it. This recipe makes 24 normal sized muffins. So if you are not making for a whole school of kids, you may want to cut the recipe in half. I know I keep saying muffins, but these are like cup cakes too! You can also Make one big cake instead of muffins.
The original recipe used lemons, I choose to use Meyer lemons instead as it is not at tart. Meyer lemons is like a cross between a lemon and an orange.
The frosting on these muffins is incredibly delicious. It will work on any cake recipe you have. I am the worst when it comes to frosting any thing. I have no training or know how to do it at all. I cannot tell you how many people have teased me about my frosting skills.
