Recipe
1 pound of chicken tenders, cubed
Juice or 1 lime
1 teapspoon green seasoning
2 teaspoon cooking oil
1/2 red, green and yellow bell peppers, seeded and thinly sliced lengthwise
1/4 head of red and white cabbage chopped in 2 inch chunks
1 cup of pea pods, ends removed
1 whole carrots, peeled, and thinly sliced length wise (same size as bell peppers)
1 whole choyota, peeled, cored and thinly sliced lenthwise
1/2 of a large white onion, thinly sliced
1 cup of water chestnuts, drained
2 tablespoon of freshly cruched garlic
1 tablespoon freshly grated ginger
4 thai chili peppers, cut in half
2 teaspoon chili sambal (oelek brand)
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon Chinese Seasoning Salt (optional)
2 tablespoon chopped cilantro
FOR THE SAUCE:
1 teaspoon thick soy sauce
1 teaspoon oyster sauce
1 teaspoon sugar
2 teaspoon rice wine vinegar
1/4 cup of chicken stock
Directions
Squeeeze the juice of the lime over the chicken pieces. Rinse with tap water and drain. Season with green seasoning and a pinch of salt and black pepper. Set aside to marinate for 30 minutes.
In a small mixing bowl add all the ingredients for the sauce and whisk together. Set aside until ready to use.
Heat a large wide skillet on medium heat. Add 2 teaspoon of oil.
Add the onions, garlic, sambal and ginger and allow to fry for 2 minutes, stiring to avoid the garlic from burning.
Add the season chicken. Cook for 5-6 minutes. Add carrots and the chili peppers. Cook for 3-4 minutes.
Add the choyota and allow this to cook for 2 minutes as well. Next add in the bell peppers. Make sure you are stiring to incorporate everything. Once the peppers has cooked for 2 minutes as well, add in the cabbage, the pea pods and the water chestnuts.
Season with salt and black pepper. Pour in the sauce and stir. If you have chinese seasoning salt add it at this time.
Once the cabbage is semi cooked add the cilatro and turn off the heat. You want the cabbage to stil have a little crunch to it.
Serve with hot rice or by itself. What a great dish if you are watching what you eat!
***You can add any vegetables you like to this dish. The important step in this is to make sure you add the vegetables in order. The carrots will take the longest to cook so that went in first.
