Recipe
4 slices of king fish (or any non-flaky fish like sword fish or red snapper)
2 tablespoon green seasoning (recipe below)
1 tablespoon salt
1 teaspoon tomato ketchup
1 teaspoon tomato paste
Juice of 1 lime
1 large, ripe tomato
3 cloves of garlic (crushed)
1 thinly sliced shallot
1 piemento pepper (optional)
1/2 habernero pepper
1/4 cup of all purpose flour
2 tablespoon curry powder
1/2 cup of vegetable oil
1 stalk of chinese celery
1/2 cup of cilantro finely chopped
1/2 carrot sliced
1/4 cup of sweet bell peppers
1 cup of water
Green seasoning recipe
1 cup of chinese celery
1 cup of cilantro
1 head of garlic, peeled
1 small onion
2 stalks of green onions
2 habanero peppers
2 piemento peppers
1 piece of ginger
Place all ingredients into a food processor and pulse into a fine paste.
Directions
Wash your fish with the juice of the lime and rinse with cold running water. Drain and set aside while you make your green seasoning.
Make your green seasoning per instructions above.
Season your fish with green seasoning and salt. Mix and let marinate for 30 minutes.
Let us make the sauce. In a deep skillet, heat on medium heat. Pour in 2 tablespoon of vegetable oil. Once the oilhas heated, add the sliced shallots. Cook the shallots of 2 minutes until it is soft and fragrant. Add in the garlic, piemento peppers, 1/2 habanero pepper, chinese celery chopped small, cubed tomato, sliced carrots and diced bell peppers.
Saute for 3 minutes. Add in the tomatoe paste and ketchup. Stir and let the tomato paste cook into the vegetables.
Add in 1 cup of water to the skillet and 1 tablespoon of salt, stir and let this come to a gentle simmer.
While the sauce is cooking, heat a frying pan on medium heat, add the 1/2 cup of vegetable oil. Let this heat.
In a seperate plate add the flour and the curry powder, mix. Dip each piece of fish on the flour mixture and shake off any excess flour. The marinade from the fish, add this to the sauce.
Once the oil has heated, be sure it is heated or the fish will stick. Add in your fish to fry. Aabout 2 minutes per side. The main purpose if to get some color on the fish.
Once all the fish has been fried add it to the sauce on the stove. Be gentle with the fish. Just place the fish on top and spoon some of the sauce over the fish. Let this cook for 2 more minutes and turn off the stove.
Taste you sauce, adjust seasoning.
Serve with, fluffy white rice and slices of sweet potatoes! Yum.
