Recipe
6 Chicken Drumsticks
Juice of 1 lime
2 tablespoon green seasoning
1 tablespoon Worcestershire sauce
1 teaspoon oyster sauce
1/2 teaspoon black pepper
3/4 teaspoon salt
1/2 teaspoon ground coriander
1 ripe tomato, diced
2 teaspoon freshly ground garlic
1 onion, sliced
1 pimento pepper, diced
1 habanero pepper
stalk and leaves from Chinese celery
1 tablespoon oil
3 tablespoons of sugar (white or brown)
2 cups of water
1 tablespoon ketchup
Directions
Wash and drain the chicken with the juice of the lime. Rinse with clean water and drain.
Season the chicken with green seasoning, Worcestershire, oyster sauce, black pepper, salt, ground coriander and tomato.
Mix well and allow to marinate for about 3 hours.
Heat in a wide, heavy pan on medium heat, 1 tablespoon of oil.
Add the sugar to the oil. Continue to mix the sugar and the oil together, until the sugar has melted and caramelized.
This is an important step. Do not walk away from this part. Once you see the sugar comes to a rapid bubble add in the marinated chicken with all the marinade from the bowl as well.
Mix well. Leave to cook uncovered until al the water has evaporated. Once the water is gone the chicken will start to turn brown.
Add in the onions, garlic, celery and peppers. Mix. Allow this to fry for a minute, then add in the two cups of water and cover with a tight lid.
Half way through remove the lid and stir the chicken. Recover and continue to cook until the water has thickened to a gravy and the chicken is fully cooked. This will take about 25 minutes.
Add in the ketchup. Tastes for seasoning. Adjust as necessary.
Serve with hot rice or roti!
