Recipe
1 8 ounce can of dark red kidney beans
1 teaspoon vegetable oil
2 teaspoons sugar
1 teaspoon ketchup
1/4 of a white onion sliced
1 clove of freshly crushed garlic
1 small piece of habanero
1 Trinidad seasoning pepper, chopped (optional)
1 carrot, peeled and sliced into round circles
1/4 teaspoon salt and black pepper
1/4 teaspoon golden ray butter or regular salted butter
1 stalk of green onion, chopped
Directions
Heat the oil in a non stick pan. Add the sugar and let this brown, and caramelize until bubbling and start to turn darker in color.
Add the ketchup, this will cause the sugar to sputter, so be careful.
Once the ketchup has fried with the sugar for 20 seconds, add in the red beans, onions, garlic, peppers and carrots.
Season with salt and pepper.
Add 1 cup of water and cover. Place the heat on a low simmer for 15 minutes.
Remove the cover and you can mash some of the beans with the back of the spoon. This is optional. I like to break down some of the beans.
Add in the butter and green onions. Taste for salt, adjust as necessary.
Serve hot with white rice and stew chicken.
