Recipe
1 3-4 pound organic chicken
1/3 cup of soy sauce
1 teaspoon chinese 5 spice
1 teaspoon chinese seasoning
1 teaspoon ground black pepper
2 teaspoon fresh ground ginger
1 teaspoon sugar
1/2 lemon and the zest
1 teaspoon freshly ground habanero pepper
2 cups of vegetable oil
FOR THE OYSTER SAUCE
1 tablespoon oyster sauce
1/4 cup of ketchup
1/4 teaspoon soy sauce
1 teaspoon freshly ground hot peppers
1 teaspoon freshly ground ginger
1 teaspoon honey
1/2 lemon
1/4 cup of water
Directions
Split the chicken down the middle. You can remove the middle bone if you want of leave it on.
I left mine on because I love the bones on my chicken.
Squeeze juice of 1/2 lemon all over both sides of the chicken. Rub it in using your hands.
Rinse the chicken with cold water and drain.
In a small bowl add the rest of the ingredients and whisk together.
Place the chicken pieces in a whide non-reactive dish. Pour the marinade over the chicken.
Use your hands to rub in the marinade really well into the chicken.
Cover and marinate for 3-6 hours.
While the chicken is marinating make the oyster sauce.
Place everything under FOR THE OYSTER SAUCE in a small sauce pan on the stove on love heat.
Stir and allow this to cook for about 20 minutes. Once the water has burned off and the sauce is thick remove from the heat.
In a wide, deep skillet, heat the vegetable oil to 300 degrees. Or on medium to low.
Remove the chicken from the marinade and pat dry with paper towels.
Using tongs, gently place 1 half of the chicken skin side down first into the oil.
If you have a wire mesh that prevents oil splatter, this would be the time to use it.
Allow the chicken to cook on the skin side down for 8 minutes without moving it.
After 8 minutes, flip it over. The skin side should have anice, golden brown color.
Lower the heat a little again, to 290…and cook on that side for 12 minutes. If the oil is low enought it will not burn.
Remove from the oil and drain on paper towels. Cook the other half of the chicken the same way.
Once the chicken has rested fully, cut into desired piecs and serve with the oyster sauce!.
