Recipe
1 green papaya
2 carrots
1/4 cup of tightly packed cilantro
4 thai red chilis
1 clove of garlic
1 teaspoon salt
2 teaspoon sugar
juice of 1/2 lime
1/2 of a lime, cut into two pieces
1/2 teaspoon fish sauce
1 teaspoon chopped peanuts
Directions
Peel the papaya, Split it down the middle and using a spoon scoop out the seeds.
If you have a spiralizer, this works best. If not use a hand held shredder.
Peel and shred the carrots as well.
Add the carrots, papaya and cilantro to a bowl.
Add the chili peppers, salt, sugar, garlic and the two pieces of limes to a mortar and crush it.
You are looking for small chunks of the peppers and garlic.
After crushing it, remove the lime pieces and add in the juice of the lime and the fish sauce.
Pour that mix over the shredded vegetables and mix well.
Place in the fridge to sit for about 30 minutes before serving. Garnish with chopped peanuts.
