Recipe
FOR THE BEEF MARINADE:
1 pound of beef sirloin, thinly sliced
1 teaspoon freshly grated ginger
2 teaspoon freshly grated garlic
1 tablespoon soy sauce
1 tablespoon thick soy sauce
1 teaspoon oyster sauce
1 teaspoon fish sauce
1/4 cup of water
1/4 teaspoon ground star anise (use a whole one if you cannot find ground)
1 teaspoon pepper flakes
1 teaspoon brown sugar
FOR THE SAUCE:
1 tablespoon soy sauce
1 teaspoon oyster sauce
1 teaspoon dark soy sauce
1 teaspoon fresh ground white pepper
1 teaspoon pepper flakes
1 teaspoon brown sugar
FOR THE STIR FRY:
1 cup or pound of fresh noodles, cooked to the packaged directions.
1/4 cup of sliced bell peppers (any color)
1/2 cup white onion, sliced
1/2 cup of snow peas
1/2 cup of scallions, chopped into 2 inch lengths
1/2 cup of bean sprouts
1/2 cup of shredded cabbage
3 Serrano chilies, chopped (can reduce if you do not want it too spicy)
1 tablespoon freshly minced garlic
1/2 teaspoon of sesame oil
Directions
Whisk all the ingredients for the Beef Marinade in a sealable container. add the thinly sliced pieces of beef. Place in the refrigerator to marinate for 1 hour, of course the longer it marinates the more intense the flavor.
After prepping all your vegetables. Whisk together all the ingredients under the Sauce in a small bowl and set aside.
Drain the liquid marinade from the sliced beef.
Heat your wok over high heat. Add the sesame oil. When it is smoking hot, add the garlic. Stir fry it for 20 seconds. Keep tossing it so it does not burn. Add in the marinated pieces of beef. Again stir fry for about 60 seconds.
Add in all the peppers and onions. Sauté for 2 minutes. Add in the cabbage, snow peas, bean sprouts and green onions. Stir-fry for another minute.
Add in your cooked noodles and the sauce. Stir-fry until the sauce is fully combined into the vegetables and noodles.
If your noodles are sticking, use a tongs to toss it.
Remove from heat and garnish with extra pepper flakes and thin strips of cabbage!
Serve with a cold glass of milk!
