Recipe
For two people.
1 Spicy Italian Sausage, casing removed
1 shallot, chopped finely
1 clove of garlic
1 green shishito pepper, cubed
1 red jalapeno pepper, cubed
1 8 ounce can of crushed tomatoes
1 teaspoon sugar
1/4 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chicken stock
3 large organic eggs
1 teaspoon fresh basil chopped
2 tablespoons crumbled feta cheese
Directions
Preheat oven to 400 degrees.
Heat a medium sized cast iron skillet, on medium heat on the stove top. Remove the sausage from the casing. Add it to the skillet and start breaking it up as it cooks.
Once the sausage has cooked for 5-6 minutes and it is browned through, add the shallots, the peppers and the garlic. Cook until the shallots and peppers are just softened.
Add in the can of tomatoes, together with the coriander, cumin, sugar, salt and black pepper. Stir together. Add in the chicken stock. Allow this to simmer on low for about 15 minutes.
Meanwhile, crack the eggs 1 at a time into individual bowls. Be extremely careful to NOT break the yolk.
Once the tomatoes sauce has reduced, make three little spoon sized wells and add the eggs one into each hole, gently so as to not break the yolk.
Place the cast iron into the oven and cook for 5-6 minutes, remove and sprinkle the feta cheese on and place back in the oven for another 2 minutes.
You are only going to cook it until the eggs have set. Remember even after you remove it from the oven the eggs will continue to cook, so keep that in mind. After removing from the oven, sprinkle with chopped basil.
You will need a crusty bread or Pita bread to sop up all that delicious sauce! I had mine with grilled cheese sandwich! So good!
