Recipe
6 big scallops
1 teaspoon harissa powder
1/4 teaspoon toasted minced garlic
1/2 teaspoon hot paprika
1/2 teaspoon sea salt
1/2 teaspoon cayenne pepper
1 tablespoon butter
Directions
Mix all ingredients above in a little bowl. Sprinkle the dry rub on a flat surface/plate and pat the Scallops on the top and bottom.
Heat a skillet on medium to high heat with 1 tablespoon of butter. You will want the pan fairly hot to sear the scallops on each side.
Scallops do not need a lot of cooking it is similar to shrimp. So I cooked mine 1 minute on each side. Just enough to sear it nice and brown.
That is all. Nothing fancy for scallops as you want to preserve its taste and just kick it up a notch. It goes great with granny smith apples and radishes thinly sliced and mixed with a dash of white wine vinegar and a 1/4 teaspoon sugar and some celery salt.
