Recipe
1 tablespoon butter
1 small onion chopped
1/4 cup of diced bell peppers
1 cup of smoked turkey sausage
2 cups of parboiled rice
1 packet of sazon seasoning with achiote
1 tablespoon adobe seasoning salt
2 teaspoons tomato paste
1/4 cup of fresh chopped tomatoes
4 cups of water
Directions
To a pan, on medium heat, add the butter to melt. Once melted, add the onions to sweat. Once the onions a softened, add peppers and saute.
Add in the turkey sausage and fry for 2-3 minutes. Let it get a little crust on it. Add in the rice, adobe, sazon and tomato paste. Mix everything together really well.
You want the seasoning salts to stick to the rice. Add in 4 cups of water and chopped tomatoes.
Allow it to come to a gentle bubble, then cover it with a lid. turn the heat down to low simmer. Cook for 20 minutes. turn off the heat and leave it for 10 minutes covered.
Remove the cover and fluff with a fork.
Very quick and simple meal!
