Recipe
6 Red Snapper fillets
1/2 teaspoon salt
1/2 teaspoon black pepper
2 cloves of garlic, finely minced
2 tablespoons fresh lime juice
1 tablespoon sambal (hot chili paste)
2 tablespoons fish sauce
1 teaspoon of brown sugar
olive oil for drizziling
Lemon slices for serving
Directions
Pat the red snapper dry with paper towels. Season both sides of the fish with salt and black pepper.
In a small bowl combine fish sauce, minced garlic, sambal, sugar and lime juice. Whisk together.
Spoon the marinade over each piece of fish.
Heat the broiler.
Place fish in the oven and char until parts of it is brown. Approximately 5-7 minutes depending on the thickness of your fillets.
Remove from the oven and drizzle with olive oil and serve alongside with lemon slices.
