Recipe
1 cup of water
1 stick of butter or 8 tablespoons
1/2 teaspoon salt
1 teaspoon white sugar
1 cup flour
3 eggs
zest of 1 lemon
Directions
Pre-heat Oven to 375 degrees.
In a medium sauce pan over medium heat, add the stick o butter, cut into about 6-8 pieces. Add the water, salt and sugar.
Once the butter has melted and the water starts to bubble, reduce the heat to low and add in the flour all at the same time. Mix vigourously, with a spoon. Continue mixing for about two minutes until the flour is combined and just coming away from the sauce pan to form a ball in the middle.
Remove from the heat. Allow to cool just enough so that you can stick your finger in it wihout it being hot.
Add in the eggs 1 at a time, mix with am eletric mixer on low power. Once each of the eggs are in add in the zest of the lemon.
After the 3 eggs the mixture should be just falling off of the spoon.
Spray a baking sheet with butter. Pour the batter into a zip lock bag and make a small hole on one of the ends to pipe out the mixture.
Drop about a tablespoon each, with about an 2 inches between them.
Place in the oven for 20 minutes or until the puffs are brown.
Remove from the oven and pierce each one with a toothpick so that it does not drop.
Cut it down the center and fill with tuna salad, crab salad, chicken salad…cheese? Anything you want.
