500G Bread Flour
1/2 cup of sugar
1 tsp salt
2 tsp instant yeast
1/2 cup of boiled and mashed potatos
2 eggs
180 ML milk
60G unsalted butter
1 egg + 1 tablespoon water
sesame seeds
Directions
To the bowl of a stand mixer, add the flour, sugar, salt, yeast, mashed potato.
Turn on the mixer and mix well.
To a measuring cup add the milk and eggs. Whisk lightly.
Pour the milk and egg mixture slowly into the dry ingredients, while the mixer is on speed 1.
One the dough has come together, about 5 minutes, add in the room temperature butter in small pieces.
Turn off the mixer. The dough will be slightly sticky. Cover it with a clean tea towel and all to rest for 20 minutes in a warm area.
After 20 minutes, using your hands, knead the dough again. Just about a minute or two of kneading. Cover and set aside to rest for another 20 minutes.

After an hour sprinkle a clean surface with flour and spread the dough out. Cut into 8 pieces.
Form each piece into a roll/bun.
Cover and rest for 45 minutes or until the dough has doubled in size.
Pre-heat the over to 375 degrees F.
Baste the tops of the dough with the egg and water mixture. Sprinkle with sesame seeds on top.
Bake for 20 – 25 minutes.
Remove from the oven and allow to cool before eating…if you can wait that is!
