Recipe
4 boneless, skinless chicken thighs
2 cup cooking oil
Marinade Spice mix
1 teaspoon dried oregano
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic salt
1 teaspoon paprika
2 teaspoon salt
1 teaspoon cayenne pepper
1/2 teaspoon sugar
1 tablespoon green seasoning (OPTIONAL)
For the Seasoned flour
2 cups all purpose flour
1/2 of the Marinade Spice Mix (above)
Directions
Combine all of the dried spices under the Marinade Spice Mix.
Cut the chicken thighs into 1-1.5 inch pieces. Trim any excess fat and wash the chicken with 1 tablespoon of lime juice and water.
Place the chicken pieces on a tray lined with paper towels to dry off.
Take half of the spice mix and add it to a bowl with the chicken pieces. Add 1 tablespoon of water to it.
Mix until all the pieces are fully coated. Cover and marinate for at least 1 hour.
Add the flour to a bi bowl and add the second half of the spice mix to it. Whisk together breaking up any clumps.
Pre-heat the oil in a deep pan to 340 degrees. Use a thermometer. It is important to keep the oil at the right temp.
Set up your breading station. 1 bowl with water, the seasoned flour and a cookie tray to place the breaded chicken on.
Take the marinated chicken pieces and dredge a few pieces at a time in the seasoned flour.
Shake off the excess and dip it into the bowl with the water for 5 seconds. I used a large strainer to make it easier.
Drain off as much water as you can. Once no more dripping water, add it back into the seasoned flour.
Don’t do too many at a time.
Using your hands and fingers, lift and drop the chicken through the flour a few times. Once all of it is coated, gently shake the chicken in your hand back and forth.
This creates those yummy flakes. Place it on the cookie sheet until you are ready to fry.
Once the oil is at the correct temp, add a few pieces at a time to the hot oil.
Fry for 6 minutes, less if your chicken pieces are smaller.
Once it starts to turn a light golden brown, remove it from the oil and place it on the wire rack to drain.
Do not set it on paper towels. That will make that beautiful, crispy skin soggy.
Serve with seasoned fries…or heck just eat it like that!
