Recipe
2 slices of salmon
1 tablespoon of good olive oil
The zest and juice of 1 lemon
1 teaspoon fresh garlic
1 teaspoon fresh ginger
1 teaspoon fresh thyme
1 teaspoon fresh dill
1 teaspoon dried oregano
1 teaspoon pepper flakes
1/2 teaspoon harissa
1 teaspoon sea salt
1 tablespoon butter
Directions
Place everything besides the butter and fish in a magic bullet or food processor or if you do not have any of these just place everything in a bowl and whisk briskly together.
Pour this mixture over the fish, cover and refrigerate for about 45 minutes.
Heat you skillet on medium to high heat on the stove top. Add butter to the skillet. Once the butter has melted place the fish with the skin side facing up. Do not move the fish. Leave it in place for 1 minute. This will make sure you get a nice brown sear. Flip on the side. Sear for 30 seconds. Flip on the other side sear for 30 seconds. Flip on the skin side down sear for 1 minute. Remove from skillet.
You can cook this fish in the oven or on a grill. I like mine with butter. To go the extra step you can deglaze your skillet with 1/4 cup of wine and pour this over the fish.
