Recipe
5 pieces of either Chicken Thighs and Drumsticks or 5 of each. (Cleaned and trimmed of any fat)
4 tablespoons of BBQ Sauce (any that you prefer)
1 tablespoon oyster sauce
1 tablespoon fish sauce
1 tablespoon hoisen sauce
1 teaspoon freshly crushed red chillies (or cayenne pepper)
1 teaspoon freshly grated garlic
1 teaspoon black pepper
1/2 teaspoon salt
Directions
To a small bowl add the BBQ sauce, hoisin sauce, oyster sauce, fish sauce, red chilis and fresh garlic. Mix together.
Add the chicken pieces to a big bowl. Season with the salt and black pepper.
Add half of the BBQ sauce mixture to the chicken. Reserving the other half for basting.
Mix the chicken well to coat each piece of meat. Set aside to Marinate for 30 minutes or more.
Preheat the oven to 425 degrees.
Add a wire rack over a cookie sheet that has been lines with tin foil. The tin foil is optional, it helps with cleanup.
Place the chicken pieces on the wire rack.
Once the oven is heated, place the meat in the oven to cook. bake for 20 minutes.
Remove it from the oven and start basting the chicken pieces every 5 minutes, flipping it as well.
After 35 minutes remove it from the oven and let it sit for 5 minutes.
Enjoy with Mashed potatoes!
