Recipe
1 cup of stevia baking sugar (sub with regular sugar)
3/4 cup softened butter
1 cup of old fashioned oats
2 eggs
1 teaspoon mixed essence (of vanilla)
2 cups all purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup of semi sweet chocolate chips
1 cup of roughly chopped sweet cranberries
Directions
Preheat oven to 350 degrees.
In the bowl of a stand mixer, add the butter and sugar. Mix until creamed. Add in the eggs one at a time, while the mixer is going. Add in the essence.
Add the baking powder, flour, salt and oats. Keep mixing on a low speed until everything is incorporated.
Remove from the hand mixer and fold in the cranberries and the chocolate chips.
Using an ice cream scoop, scoop out the dough onto a cookie sheet, you may need two. Make sure to leave at least an inch between each cookie. Do not flatten.
Place into the oven to bake for 15 minutes, or until the tops starts to brown.
After baking remove to a wore rack to cool.
