Recipe
4 fresh fillets of Mahi Mahi
2 Lemons
Salt
Olive oil
2 jalapenos (cut into small rings)
Soft or hard Taco shells (depending on the type you like)
1 whole ripe avocado, peeled and sliced thinly
For the spice Rub
1 tablespoon cayenne pepper
1 teaspoon cumin powder
1 teaspoon hot paprika
1 teaspoon ground coriander
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
For the Slaw
1 cup of finely shredded white cabbage (can mix with purple)
1/4 cup finely shredded carrots
1/4 cup finely chopped cilantro
1/4 teaspoon celery seed
1 tablespoon white wine vinegar
1/4 tablespoon white sugar
juice of 1 lemon
1/4 teaspoon salt
For the Avocado Sour Cream sauce
1 ripe avocado, peeled
1 cup of Mexican sour cream
1 tablespoon siracha hot sauce
1/4 cup of chopped cilantro
a pinch of black pepper
juice of 1/2 a lemon.
Directions
Make the Avocado Sour Cream sauce first.
To a food processor add all the ingredients under the recipe for Avocado Sour Cream Sauce. Mix to a smooth, creamy mixture. Pour into a glass bowl and store in the refrigerator until ready to use.
For the Slaw
Combine the lemon juice, celery seed, sugar, salt and white wine vinegar into a small dish. Whisk together until the sugar is melted.
Pour this mixture over the shredded cabbage, carrots and cilantro. Toss well together and refrigerate.
For the Fish
Mix all the dry ingredients together under the spice rub.
Rinse the fish under cold tap water and pat dry with paper towels.
Sprinkle the olive oil over the fish and run in with your fingers. Sprinkle slat to taste over the fish. Rub this in as well. Sprinkle the fish liberally with the spice rub. Rub it in with your fingers. Set aside to marinate for 30 minutes.
Heat a grill pan or the grill outside and cook the fish on each side for 2 minutes each. Cook until fish is soft and flaky. While the fish is grilling slice the two lemons and gill those as well.
Once the fish is done grilling, squeeze the juice of the lemons that has been grilled over the fish.
Assemble
To assemble the Tacos you can heat the tortillas over the grill or deep fry it like me.
First add some shredded fish (or you can leave it whole).
Then add the slaw, a few rings of jalapenos and slices of avocado. Then add the sour cream on top.
Sprinkle some finely chopped cilantro for garnish.
