Recipe
6-8 Full size chicken wings
1 teaspoon whole all spice
1/2 teaspoon whole cloves
1 teaspoon whole peppercorns
1 tablespoon sea salt
1 whole habanero pepper
1 teaspoon fresh garlic
1 teaspoon fresh ginger
1 teaspoon fresh thyme
2 teaspoon brown sugar
1 teaspoon honey
1 teaspoon soy sauce
1 sprig of green onions finely chopped
1 small shallot finely chopped
Directions
In a mortar and pestle add peppercorns, allspice, cloves and salt. Grind this into a powder consistency. Add in the pepper, thyme, ginger and garlic. Continue to crush and mix together.
Transfer to a small bowl, add in the honey, soy sauce, sugar, shallots and green onions. Mix thoroughly. Set this aside.
Wash and clean your chicken wings. Remove any little feathers that is still on it and rinse with cold running water. Drain.
Add the jerk seasoning to the chicken wings. Toss to coat all the wings. Set aside to marinate for at least 4-6 hours. The longer it marinates the better the flavor.
Heat your BBQ grill to High. Place the wings on it for about 1 minute. Turn the grill down to Medium. Let the wings cook for about 8 minutes per side. The bigger the wings the longer it has to cook. You can test if it is finished with one of the wings by gently pulling apart the thickest part of the meat. If it Is still pink inside it needs more cooking. The inside should be white or clear.
Enjoy with some Beans and Rice and fried plantains!
