Recipe
3 fresh pieces of Turkey Wings
3 fresh pieces of Turkey Drumsticks
1 large onion
3 stalks of celery
4 bay leaves
2 heads of garlic
2 sweet peppers
2 large carrots
zest of 1 orange
1 teaspoon peppercorns
1 teaspoon whole allspice
1 teaspoon whole cloves
2 sticks of cinnamon
2 stalks of rosemary
4 stalks of thyme
6 leaves of sage
2 cups of white wine
6 cups of water
Directions
Place all the ingredients above in a large roasting pan. Cut the head of garlic down the middle in half, cut the onion in quarters, cut the carrots and the celery in big chunks and place on the roasting pan. Add the wine and water to the pan as well. Cover with tin foil and place in a 350 degree oven and roast for 4 hours.
When the 4 hours is up, remove the turkey pieces and set aside. These you can discard or you can actually cook it and eat. I actually made stew turkey with mine…It was pretty good.
Strain the rest of the stock into jars with tight lids and after cooling store in the refridgerator for up to 2 weeks. Use in anything that requires stock.
I will be using mine for my gravy, and for my mushroom sauce for thanksgiving.
